Here&#8217;s one recipe from the Carnival galley that you might find on your next voyage.<br \/>\n<!--more--><\/p>\n<p>INGREDIENTS:<\/p>\n<p>YOUR SCALLOP GEAR:<br \/>\n1\u2155 lbs scallops<br \/>\n\u00bd oz garlic, chopped<br \/>\n1 oz parsley, chopped<br \/>\n4 oz butter<br \/>\nsalt to taste<br \/>\ncrushed black pepper to taste<\/p>\n<p>YOUR RISOTTO STUFF:<br \/>\n1 lb Arborio rice<br \/>\n1 qt chicken stock<br \/>\n\u00bd oz garlic, chopped<br \/>\n2 oz shallots, chopped<br \/>\n1 oz blended olive oil<br \/>\n10 oz white wine<br \/>\n1 bay leaf<br \/>\n8 oz parmesan cheese<br \/>\n8 oz soft butter<br \/>\n1 oz chopped parsley<br \/>\ntruffle oil to taste<br \/>\nsalt to taste<br \/>\nwhite pepper powder to taste<\/p>\n<p>YOUR GREMOLATA CONTENTS:<br \/>\n\u00bd oz lemon zest<br \/>\n\u00bd oz lime zest<br \/>\n\u00bd oz orange zest<br \/>\n\u00bd oz fresh parsley, chopped<br \/>\n1 oz fresh orange juice<br \/>\n1 oz olive oil<br \/>\nsalt to taste<br \/>\npepper to taste<\/p>\n<p>FOR THE GARNISH:<br \/>\n10 oz red wine reduction<br \/>\nparsley sprigs for garnish<br \/>\nparmesan crisp for tasty garnish<\/p>\n<p>TO COOK THE SCALLOPS:<br \/>\nMarinate your scallops with garlic and chopped parsley right before you cook \u2018em.<br \/>\nCook \u2018em! Give the scallops a quick sear \u2014 making sure not to overcook them \u2014 and then season them.<\/p>\n<p>TO MAKE THE RISOTTO:<br \/>\nSautee the onion, chopped shallot, garlic and bay leaf in blended oil. Deglaze the pan with white wine, then reduce the contents of the pan.<br \/>\nAdd Arborio rice and saut\u00e9 it for a while. Add a little bit of stock, stirring the rice continuously while adding it.<br \/>\nCook rice till the texture\u2019s al dente.<br \/>\nFinish the risotto with soft butter, parmesan cheese and chopped parsley.<\/p>\n<p>TO GREMOLATE THE GREMOLATA:<br \/>\nJust combine all ingredients together. That\u2019s it!<\/p>\n<p>TO MAKE THE WHOLE THING LOOK REALLY FANCY:<br \/>\nUsing a squeeze bottle, drizzle small circles of red wine reduction onto the plate.<br \/>\nScoop 2 oz of risotto onto the center of the plate.<br \/>\nPlace three scallops on top of the risotto.<br \/>\nDrizzle some gremolata onto scallops.<br \/>\nGarnish the dish with a parmesan crisp and parley sprig.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Having just returned from a Carnival Cruise Line voyage, I can tell you personally that the food was great.
