{"id":4840,"date":"2018-09-28T09:47:40","date_gmt":"2018-09-28T14:47:40","guid":{"rendered":"http:\/\/www.premiercustomtravel.com\/blog1\/?p=4840"},"modified":"2018-09-28T09:47:40","modified_gmt":"2018-09-28T14:47:40","slug":"recipe-hortons-cereal-crusted-french-toast","status":"publish","type":"post","link":"https:\/\/www.premiercustomtravel.com\/blog1\/?p=4840","title":{"rendered":"Recipe: Horton&#8217;s Cereal-Crusted French Toast"},"content":{"rendered":"<p><a href=\"http:\/\/www.premiercustomtravel.com\/blog1\/?attachment_id=4841\" rel=\"attachment wp-att-4841\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-4841\" src=\"http:\/\/www.premiercustomtravel.com\/blog1\/wp-content\/uploads\/2018\/09\/PageImages_1200X430_SeussToast-300x108.jpg\" alt=\"\" width=\"300\" height=\"108\" srcset=\"https:\/\/www.premiercustomtravel.com\/blog1\/wp-content\/uploads\/2018\/09\/PageImages_1200X430_SeussToast-300x108.jpg 300w, https:\/\/www.premiercustomtravel.com\/blog1\/wp-content\/uploads\/2018\/09\/PageImages_1200X430_SeussToast-768x275.jpg 768w, https:\/\/www.premiercustomtravel.com\/blog1\/wp-content\/uploads\/2018\/09\/PageImages_1200X430_SeussToast-1024x367.jpg 1024w, https:\/\/www.premiercustomtravel.com\/blog1\/wp-content\/uploads\/2018\/09\/PageImages_1200X430_SeussToast.jpg 1200w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Just in time for the weekend, here&#8217;s a fun recipe from\u00a0<a href=\"https:\/\/www.premiercustomtravel.com\/carnival\">Carnival Cruise Line<\/a> that you can make for your kids (or for yourself &#8211; we won&#8217;t judge!)<br \/>\n<!--more--><\/p>\n<p>Take this as an interesting behind-the-scenes look at how Carnival makes the amazing french toast you can enjoy at sea at the Green Eggs and Ham Breakfast with The Cat in the Hat and Friends!<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<p>To make the brioche dough:<br \/>\n3 lb, 3 oz flour<br \/>\n18 whole eggs<br \/>\n1 oz salt<br \/>\n6 oz sugar<br \/>\n2 oz dry yeast<br \/>\n1.5 lb butter solids<\/p>\n<p>For the french toast batter:<br \/>\n8 oz flour<br \/>\n3 lb egg<br \/>\n1 lb sugar<br \/>\n2 tsp cinnamon powder<br \/>\n2 liters milk<\/p>\n<p>Thick version of the batter (use this for brushing):<br \/>\n1\u00bd lb flour<br \/>\n2 lb egg<br \/>\n1 lb sugar<br \/>\n2 tsp cinnamon powder<br \/>\n2 cups milk<br \/>\n12 oz Fruit Loops<\/p>\n<p>Marshmallow (1 tray):<br \/>\n1\u00bd lb sugar<br \/>\n6 oz liquid glucose<br \/>\n350 mL water<br \/>\n1 lb egg white<br \/>\n3.5 oz gelatin<br \/>\n300 mL water<\/p>\n<p>The garnish:<br \/>\nSome strawberry<br \/>\nThe marshmallows!<\/p>\n<p><strong>PROCEDURE:<\/strong><br \/>\nLet\u2019s make some brioche:<br \/>\nMix the dry ingredients first \u2014 the flour, salt, sugar and dry yeast.<br \/>\nAdd those fresh eggs.<br \/>\nMix all of this together. You\u2019ll get dough! Keep on mixing until it stops sticking to the walls of mixing bowl.<br \/>\nAdd soft butter and keep on mixing the dough until it turns smooth.<br \/>\nMake individual bread loaves in a baking pans using 10 ounces of brioche dough at a time.<\/p>\n<p>Now we\u2019re making a french toast batter:<br \/>\nNow you have freshly-baked brioche\u2026 in your home! Take a moment to savor that amazing scent.<br \/>\nCut your brioche into one-inch-wide slices.<br \/>\nPrepare a french toast batter by simply combining the flour, egg, sugar, cinnamon powder and milk.<br \/>\nBatter up! Dip both sides of your bread in the batter.<br \/>\nDrizzle soft butter and oil prep on the bread and cook over medium heat until it\u2019s golden-brown on both sides.<\/p>\n<p>Let\u2019s make more french toast batter. Except this time\u2026<br \/>\nYep, we\u2019re actually going to make more batter, but it\u2019s a thicker version. Yum!<br \/>\nCombine all of the ingredients \u2014 flour, egg, sugar, cinnamon powder and milk. Just leave the Fruit Loops aside for now.<br \/>\nNow grab the cereal! Hand-crush half of it, leaving the other half whole, and mix all of it together.<br \/>\nBrush your french toast with the thick batter. It should end up sticky. Use the stickiness to coat the french toast with the cereal.<br \/>\nGrab a sheet tray and line up the pieces of french toast.<br \/>\nPass it through a CTX \u2014 that\u2019s a commercial conveyor-belt oven, like what you\u2019d use for pizza \u2014 set at 500\u00b0 F (top and bottom). The trip through should take 7 minutes.<\/p>\n<p>Ever made a marshmallow? Here\u2019s how:<br \/>\nDissolve the gelatin with 600 mL of water and melt it over double boiler. You have a double boiler, right? (If not, search the Internet for how to improvise an alternative. It\u2019s not hard!)<br \/>\nCombine the sugar, water and glucose. Boil it until it reaches the consistency of a soft ball. Once the mixture is warm, add the gelatin.<br \/>\nBeat the egg white, then pour syrup and make meringue. (We won\u2019t go into the procedure here \u2014 the Internet can help\u2026 or really, just use pre-made marshmallows. There\u2019s no shame in it!)<br \/>\nKeep running the machine until the mixture cools down.<br \/>\nDust a tray lightly with powdered sugar.<br \/>\nPour a thin layer of the mixture into the tray.<\/p>\n<p>Let\u2019s make these ingredients garnish-worthy:<br \/>\nCut your strawberries into round slices using cookie cutter #2.<br \/>\nCut the marshmallows into round slices using the same cookie cutter.<br \/>\nArrange on a food-grade skewer. Each skewer should have four slices of strawberry and three slices of marshmallow.
