Today, we&#8217;re happy to feature a tasty recipe directly from the galleys of <a href=\"https:\/\/www.premiercustomtravel.com\/cruises\/uniworldboutiquerivercruisecollection.html\">Uniworld Boutique River Cruise Collection<\/a>.<br \/>\n<!--more--><\/p>\n<p>\u201cBacalhau Portuguese\u201d Portuguese Salt Cod<\/p>\n<p>\u201cOne of Portugal\u2019s favorite national dishes is bacalhau. Versions of this dish are enjoyed everywhere from Italy and Africa to Scandinavia, where it is known as lutefisk. Bacalhau is a must-taste for any visitor to Portugal.\u201d<\/p>\n<p>\u2013Gerard Van Helvoort<br \/>\nCulinary Director<\/p>\n<p>INGREDIENTS:<\/p>\n<p>2 lbs (900 g) salt cod, soaked<br \/>\n2 large onions, sliced<br \/>\n6 Tbsp (85 g) butter<br \/>\n1 garlic clove, minced<br \/>\n3 large potatoes<br \/>\nBlack pepper to taste<br \/>\n2 Tbsp (20 g) breadcrumbs<br \/>\n10 green olives, pitted<br \/>\n10 black olives, pitted<br \/>\n4 large eggs, hard-cooked<br \/>\n1\/2 cup (120 g) fresh parsley leaves, chopped<br \/>\n2\u20134 Tbsp wine vinegar to taste<br \/>\n2\u20134 Tbsp olive oil to taste<\/p>\n<p>PREPARATION:<\/p>\n<ol>\n<li>Soak the dried cod in cold water for about 24 hours, or until completely moistened. Change the water several times; drain thoroughly.<\/li>\n<li>Put the cod into a saucepan with cold water to cover. Bring to a boil, reduce heat and simmer for 15 minutes or until fish is tender. Drain; skin and bone the fish. Flake with a fork into large pieces.<\/li>\n<li>Saut\u00e9 the onions in half the butter until they are tender and golden, then add the garlic. Boil the unpeeled potatoes in salted water. Once tender, remove from the heat and refresh in cold running water. Remove potato skins and slice into 1\/4-inch (6-mm) pieces.<\/li>\n<li>Preheat oven to 350\u00b0F (175\u00b0C). Grease a 1 1\/2-qt (1 1\/2-L) casserole dish with the remaining butter. Arrange a layer of half the potatoes, then half the cod, then half the onions. Sprinkle with a little pepper and repeat layering. Sprinkle breadcrumbs over the top layer.<\/li>\n<li>Bake for 15 minutes, or until heated through and lightly browned. Before serving, garnish with olives and eggs, and sprinkle with parsley.
