Obatzter is a Bavarian full-flavored cheese spread. This German beer cheese spread is a MUST in each beer Bavarian Beer garden and a very popular Octoberfest specialty.<\/p>\n

Recipe by Reiner Marks, Director, Business Development, former Viking River Cruise Executive Chef<\/p>\n

Ingredients:<\/p>\n

\u2022 11 oz. Ripe camembert or Brie, cut into pieces
\n\u2022 3 Tbsp Butter, softened (or whipped cream cheese)
\n\u2022 1 Small red onion, minced
\n\u2022 1\/3 c Beer
\n\u2022 2 tsp Sweet Paprika
\n\u2022 1\/3 tsp Ground caraway
\n\u2022 White pepper and salt to taste<\/p>\n

Preparation:<\/p>\n

1. Combine all ingredients in a bowl. Use a fork to mix them into a smooth spread and refrigerate for at least one hour.
\n2. Serve with oven fresh rustic breads and\/or pretzels. Garnish with finely chopped chives.<\/p>\n
